The artisanal goat coalho cheese is one of the products obtained that stand out in the dairy goat farming of the Northeast of Brazil. Despite its importance, goat cheese is often made under inadequate hygienic-sanitary conditions and usually uses raw goat's milk, increasing the risk of product contamination. Among the pathogens carried by goat coalho cheese, Staphylococcus aureus stands out, being responsible for cases of food poisoning and persistent infections that are difficult to treat. This study aimed to evaluate the contamination, genotypic and phenotypic resistance of Staphylococcus aureus isolated from artisanal coalho cheese made with goat milk produced in the Northeast region of Brazil. This study analyzed only artisanal coalho cheeses made with raw goat's milk and purchased directly from farms. Twelve samples of artisanal coalho cheeses made with raw goat's milk were collected (1 sample per property) in 8 municipalities in the state of Pernambuco, Northeast region of Brazil. For microbiological analysis of enumeration of Colony Forming Units (CFU/g) of Staphylococcus spp. the methodology recommended by the International Organization for Standardization (2019) and recognized by the Ministry of Agriculture, Livestock and Supply was used. After enumeration, 5 colonies were selected per enumerated plate, a total of 180 Staphylococcus spp. was obtained. These were subjected to thermal extraction of genetic material to search for the nuc gene by Polymerase Chain Reaction, the isolates carrying the nuc gene were subjected to genotypic and phenotypic evaluation of antimicrobial resistance. After the phenotypic analysis, the Multiple Antimicrobial Resistance Index was evaluated. In all samples, Staphylococcus spp. and were considered unfit for consumption, with the lowest count being 9.4x103 CFU/g and the highest 6.4x106 CFU /g. Of the 180 isolates, 28.34% (51/180) were positive for the detection of the nuc gene. All resistance genes except mecA, mecC, and norB were detected. Of the 51 S. aureus isolates, 31.37% (16/51) were considered multi-resistant and presented a Multiple Antimicrobial Resistance Index above 0.2. After microbiological analysis it was found that all samples of coalho cheese were out of standards and unfit for human consumption in accordance with Ordinance no 146/1996 of the Ministry of Agriculture, Livestock and Supply of Brazil. Furthermore, the contamination of goat coalho cheeses is a risk to public health. During sample collection were found inadequate hygiene conditions in the environment used for cheese production. The presence of Staphylococcus aureus can be attributed to hygienic-sanitary failures in cheese production. From a health point of view, it is even more alarming when it comes to S. aureus carrying resistance genes. Although the 51 S. aureus isolates did not carry the mecA, mecC, norB genes and did not show phenotypic resistance to cefoxitin and oxacillin, all other genes were detected, indicating the circulation of S. aureus carrying the tet(L) genes, tet(M), tet-38, msrA, norA, and norC, which so far had not been reported in the production chain of goat coalho cheese in Brazil. Furthermore, the evaluation of the Multiple Antimicrobial Resistance Index identified the occurrence of multiple resistance to antimicrobials in 31.37% (16/51) of S. aureus at high risk to human health. The results obtained are quite worrying and serve as a warning to the scientific community and the Food Safety and Hygiene Inspection Services.(AU)

In the present work, the biosynthesis of silver-nanoparticles (AgNP) was evaluated using the aqueous extract from Justicia spicigera. The obtained silver nanoparticles were characterized using UV-visible spectroscopic techniques, energy dispersive X-ray spectrometers (EDS), zeta potential and dynamic light scattering. The antimicrobial activity of biosynthesized AgNP was tested against foodborne bacteria (Bacillus cereus, Klebsiella pneumoniae and Enterobacter aerogenes) and phytopathogenic fungi (Colletotrichum sp., Fusarium solani, Alternaria alternata and Macrophomina phaseolina). The elemental profile of synthesized nanoparticles using J. spicigera shows higher counts at 3 keV due to silver, confirming the formation of silver nanoparticles. Scanning electron microscopy (SEM) analysis showed a particle size between 86 and 100 nm with spherical morphology. AgNP showed effective antibacterial and antifungal activity against the tested organisms principally with B. cereus, K. pneumoniae, E. aerogenes, A. alternata and M. phaseolina. Therefore, further studies are needed to confirm the potential of AgNP from J. spicigera in the control of indicator organisms under field conditions.


En el presente trabajo se evaluó la biosíntesis de nanopartículas de plata (AgNP) en presencia de una sal de plata y extractos acuosos de Justicia spicigera. Las nanopartículas así obtenidas fueron caracterizadas mediante técnicas espectroscópicas UV-visibles, espectrómetros de rayos X de energía dispersiva (EDS), potencial zeta y dispersión de luz dinámica. La actividad antimicrobiana de las AgNP biosintetizadas se probó frente a diversas bacterias transmitidas por alimentos (Bacillus cereus, Klebsiella pneumoniae y Enterobacter aerogenes) y hongos fitopatógenos (Colletotrichum sp., Fusarium solani, Alternaria alternata y Macrophomina phaseolina). El perfil elemental de las nanopartículas sintetizadas utilizando el extracto de J. spicigera mostró valores altos a 3 keV, lo que confirma la formación de nanopartículas de plata. El análisis por microscopía electrónica de barrido (SEM) reveló un tamaño de partícula entre 86 y 100 nm, con morfología esférica. Las AgNP mostraron una actividad antibacteriana y antifúngica efectiva contra los organismos evaluados, principalmente contra B. cereus, K. pneumoniae, E. aerogenes, A. alternata y M. phaseolina. Se necesitan más estudios para confirmar el potencial de las AgNP derivadas de J. spicigera en el control de organismos indicadores en condiciones de campo.

Resumen Introducción. Bacillus cereus es reconocido como un agente patógeno causante de intoxicaciones alimentarias. Se trata de una bacteria de metabolismo aerobio facultativo capaz de formar esporas, lo que le permite sobrevivir a la pasteurización y el calentamiento e, incluso, a la irradiación con los rayos gamma usados para reducir los agentes patógenos de los alimentos. Objetivo. Estudiar la presencia de B. cereus y su toxina diarreica en el arroz y en alimentos a base de cereales, harinas o féculas listos para el consumo en restaurantes escolares de algunos departamentos de Colombia. Materiales y métodos. Se hizo un estudio descriptivo y transversal con alimentos listos para el consumo distribuidos en restaurantes escolares de los departamentos que más notifican enfermedades transmitidas por alimentos al sistema de vigilancia, así como en los de menor notificación. Resultados. Se recolectaron 479 muestras en ocho departamentos, 74 municipios y 363 restaurantes escolares; el 63 % correspondió a muestras de arroz y el 37 % a alimentos como coladas. El 9 % de las muestras analizadas fueron positivas para B. cereus y, en el 91 % de estas, se detectó la toxina diarreica. Conclusiones. En todos los departamentos estudiados se encontró B. cereus. El manejo de materias primas y el inadecuado tratamiento térmico de los alimentos fueron los factores directamente relacionados con las enfermedades transmitidas por alimentos. Es importante reforzar la vigilancia e incentivar la investigación y la notificación de los brotes de enfermedades transmitidas por alimentos para mejorar la calidad de la información, llevar a cabo acciones de comunicación, prevención y coordinación intersectorial, y con los manipuladores, con el fin de adoptar las medidas necesarias que garanticen la inocuidad de los alimentos, así como la eliminación de los factores de riesgo de estas enfermedades.


Abstract Introduction: Bacillus cereus is recognized as a pathogen that causes food poisoning. It is a facultative aerobic metabolism bacterium capable of forming spores, which allows it to survive pasteurization and heating even by the gamma irradiation used to reduce pathogens in food. Objective: To study the presence of Bacillus cereus and its diarrheal toxin in rice and ready-to-eat cereals, flours, and starches in school restaurants in Colombia. Materials and methods: We conducted a descriptive cross-sectional study of ready-to-eat foods distributed in school restaurants in the departments with the most and the least notification of foodborne diseases to the surveillance system. Results: A total of 479 samples were collected from eight departments, 74 municipalities, and 363 school restaurants, 63% of which were rice samples and 37%, starchy food samples; 9% of them tested positive for Bacillus cereus. In 91% of the samples that tested positive, the bacterium was isolated with the presence of the diarrheal toxin. Conclusions: In all the departments with B. cereus in the samples, the factors directly related to food-borne diseases were the handling of raw materials and the poor thermal treatment of food. Strengthening surveillance by stimulating research and reporting on outbreaks of foodborne diseases is important to improve the quality of information, to develop communication, prevention and intersectional coordination and manipulation measures, as well as to take the necessary actions to guarantee the safety of food and to eliminate the risk factors that may contribute to this problem.

Las Enfermedades de Transmisión Alimentaria (ETA) son un problema de salud pública con altos índices de morbilidad y mortalidad a nivel global. La vigilancia y estudio de brotes de las ETA a través de Electroforesis de Campo Pulsado (PFGE) constituye un soporte fundamental para la investigación epidemiológica. El objetivo del estudio es presentar la base de datos de perfiles genéticos bacterianos y analizar brotes de enfermedades transmitidas por alimentos empleando Electroforesis de Campo Pulsado. Estudio descriptivo observacional de carácter retrospectivo, muestreo por conveniencia en el que fueron estudiados 778 aislamientos bacterianos causantes de ETA. La Base de Datos Nacional (BDN) quedó conformada por los siguientes patógenos entéricos; Salmonella spp., Shigella sonnei, Vibrio cholerae, Campylobacter spp., Escherichia coli O157:H7 y Escherichia coli no O157 caracterizados por una diversidad de patrones únicos, clusters y brotes. La BDN de Salmonella spp., quedó representada por un total de 558 cepas con 248 PUN, de las cuales 22,6% (126 cepas) corresponden a Salmonella enterica ser. Typhimurium, 20,6% (115 cepas) a Salmonella enterica ser. Enteritidis, 9,1% (51 cepas) a Salmonella enterica ser. Newport, 1,6% (9 cepas) a Salmonella enterica ser. Muenchen, que al mismo tiempo son los serotipos que están asociados a brotes. Fueron confirmados un total de 13 brotes causados por Salmonella spp.; Shigella sonnei con 113 cepas estudiadas, 57 patrones únicos y 19 clusters detectados. Se identificaron 3 patrones PYJ16X01.0012, PYJ16X01.0034 y PYJ16X01.0014 como los predominantes. Vibrio cholerae con 18 cepas estudiadas, 9 patrones únicos y 4 clusters detectados. Se pudo establecer una relación genética del 100% entre cepas de Vibrio cholerae O1 biotipo El Tor serotipo Ogawa productora de toxinas ctxA y tcpA aislada del caso índice del brote de cólera. Campylobacter spp., con 62 cepas estudiadas, 42 patrones únicos y 10 clusters detectados. La BDN de E. coli productor de toxina shiga O157 y no O157, con 9 y 20 cepas de origen humano respectivamente, caracterizadas según sus factores de virulencia y subtipos. Se reconocieron 8 patrones electroforéticos PUN y 1 cluster para E. coli productor de toxina shiga O157, y 18 PUN y 1 clúster para E. coli productor de toxina shiga no O157.La disponibilidad de una Base de Datos Nacional de patógenos bacterianos transmitidos por alimentos constituye un importante avance para la salud pública, con un gran aporte en la vigilancia y epidemiología del país permitiendo la confirmación y detección de brotes discriminando aislamientos relacionados genéticamente y por consiguiente el estudio de relaciones clonales y probable origen(AU)


Foodborne diseases (FBD) are a problem of public health with high indexes of morbidity and mortality at global level. The surveillance and study of outbreaks of the FBD through pulsed field gel electrophoresis (PFGE) is a fundamental support for epidemiological research. The aim of the study is to present the database of bacterial genetic profiles and analyze outbreaks of FBD using PFGE. This was an observational descriptive retrospective study with convenience sampling in which 778 bacterial isolates causing FBD were studied. The National Database (NDB) was made up of the following enteric pathogens causing FBD: Salmonella spp., Shigella sonnei, Vibrio cholerae, Campylobacter spp., Escherichia coli O157: H7 and Escherichia coli no O157. Each of them was characterized by a diversity of unique patterns, clusters and outbreaks. The NDB of Salmonella spp. was represented by a total of 558 strains with 248 PUN, of which 22.6% (126 strains) correspond to Salmonella enterica ser. Typhimurium, 20.6% (115 strains) to Salmonella enterica ser. Enteritidis, 9.1% (51 strains) to Salmonella enterica ser. Newport, 1.6% (9 strains) to Salmonella enterica ser. Muenchen, which at the same time are the serotypes associated with outbreaks. A total of thirteen outbreaks caused by Salmonella spp., Shigella sonnei with 113 strains studied, 57 unique patterns and 19 clusters detected were confirmed. Three patterns PYJ16X01.0012, PYJ16X01.0034 and PYJ16X01.0014 were identified as the predominant. Vibrio cholerae with 18 strains studied, 9 unique patterns and 4 clusters were detected. A genetic relationship of 100% was established between strains of Vibrio cholerae O1 biotype El Tor serotype Ogawa toxin producer ctxA and tcpA isolated from the index case of the cholera outbreak. Campylobacter spp., with 62 strains studied, 42 unique patterns and 10 clusters were detected. The NDB of O157 and non-O157 Shiga toxin producing E. coli O157, with 9 and 20 strains of human origin respectively, were characterized according to their virulence factors and subtypes. We recognized 8 PUN electrophoretic patterns and 1 cluster for O157 Shiga toxin producing E. coli, and 18 PUN and 1 cluster for non-O157 Shiga toxin producing E. coli. The availability of a National Database of bacterial pathogens transmitted by food constitutes an important advance for public health, with a great contribution to the surveillance and epidemiology of the country allowing the confirmation and detection of outbreaks discriminating genetically related isolates and therefore, the study of clonal relationships and probable origin(AU)

Foodborne diseases are a global concern. In Brazil, the most prevalent pathogen found in foodborne outbreaks is Salmonella sp. (14.4%), followed by Staphylococcus aureus (7.7%), Escherichia coli (6.5%), and Bacillus cereus (3.1%). With the aim to perform a regional detailed analysis of foodborne intoxication, we analyzed 253 outbreaks' profile reports to Food Surveillance team of the General Secretariat of Health Surveillance of Porto Alegre, Rio Grande do Sul State, between 2003 and 2013. In contrast to what was most notified in Brazil, in Porto Alegre the main outbreak agent identified was Bacillus cereus (32.2%) and, based on the patient symptoms, most cases were linked to enterotoxin production. The majority of the outbreaks were linked to the ingestion of food containing cereals or sauces poorly kept at environment temperature during the stock or preparation. We believe that, due to the compulsory use of pasteurized eggs in our city, Salmonella sp. outbreaks are less important here.


As doenças de veiculação alimentar representam um problema de ordem global. No Brasil, o patógeno mais prevalente em surtos de intoxicação alimentar é a Salmonella sp. (14,4%), seguido pelo Staphylococcus aureus (7,7%), Escherichia coli (6,5%) e Bacillus cereus (3,1%). Com o objetivo de realizar uma análise regional detalhada da intoxicação alimentar, examinamos os relatórios de 253 surtos, notificados à equipe de Vigilância de Alimentos da Coordenadoria Geral de Vigilância em Saúde de Porto Alegre, Rio Grande do Sul, entre 2003 e 2013. Ao contrário do que é notificado no Brasil, em Porto Alegre, identificamos como principal agente etiológico, o Bacillus cereus (32,2%) e de acordo com os sintomas dos pacientes, a maioria dos casos esteve associada à produção de enterotoxina. A maioria dos surtos foram associados à ingestão de alimentos que continham cereais ou molhos mantidos à temperatura ambiente durante o armazenamento ou preparação. O uso compulsório de ovos pasteurizados em Porto Alegre pode explicar a relativa escassez de surtos de Salmonella sp. no município.


Las enfermedades transmitidas a través de la comida son una preocupación de carácter global. En Brasil, el patógeno encontrado de forma más prevalente en los brotes de epidemias alimentarias es la Salmonella sp. (14,4%), seguida por el Staphylococcus aureus (7,7%), Escherichia coli (6,5%), y el Bacillus cereus (3,1%). Con el fin de realizar un análisis regional detallado de los brotes de infecciones alimentarias, analizamos el perfil de 253 brotes, registrados por el servicio de Vigilancia Alimentaria de la Secretaría General de Vigilancia en Salud de Porto Alegre, Rio Grande do Sul, entre 2003 y 2013. En contraste con lo que fue más notificado en Brasil, en Porto Alegre el principal agente causante de brotes fue identificado como el Bacillus cereus (32.2%) y, basado en los síntomas del paciente, la mayoría de los casos estaban relacionados con la producción de la enterotoxina. Muchos de los brotes estaban relacionados con la ingesta de comida que contenía cereales o salsas mal conservadas a temperatura ambiente durante el almacenaje o la preparación. Creemos que, debido a la utilización obligatoria de huevos pasteurizados en nuestra ciudad, los brotes de Salmonella sp. son menos relevantes aquí.

ABSTRACT Fresh produce is a generalized term for a group of farm-produced crops, including fruits and vegetables. Organic agriculture has been on the rise and attracting the attention of the food production sector, since it uses eco-agricultural principles that are ostensibly environmentally-friendly and provides products potentially free from the residues of agrochemicals. Organic farming practices such as the use of animal manure can however increase the risk of contamination by enteric pathogenic microorganisms and may consequently pose health risks. A number of scientific studies conducted in different countries have compared the microbiological quality of produce samples from organic and conventional production and results are contradictory. While some have reported greater microbial counts in fresh produce from organic production, other studies do not. This manuscript provides a brief review of the current knowledge and summarizes data on the occurrence of pathogenic microorganisms in vegetables from organic production.

Este trabalho objetivou comparar a qualidade microbiológica e higienicossanitáriade sanduíches comercializados por restaurantes do tipo fast food, franqueados e não-franqueados. Sanduíches de mesmo padrão foram adquiridos, sob a forma de consumidor, em 4 estabelecimentos franqueados e 4 não-franqueados, em três dias diferentes durante a semana, incluindo o final de semana. As temperaturas dos lanches foram aferidas no momento da compra e, em laboratório, as amostras foram analisadas para contagem de colônias e identificação das bactérias com os testes Enterokit B e Staphy Test da Probac do Brasil. Os estabelecimentos franqueados apresentaram mais sanduíches contaminados por coliformes fecais e S. aureus. Quanto à temperatura no momento da compra, por vários dias, ambos os tipos de estabelecimento não atenderam à legislação, apresentando valores inferiores a 60ºC, mas não houve diferença estatisticamente significante entre franqueados e não-franqueados. Estabelecimentos não-franqueados são mais contaminados, mas as lojas franqueadas também não conseguem colocar em prática o que a legislação preconiza para Boas Práticas higienicossanitárias.


This study aimed to compare the microbiological and sanitary conditions between sandwiches sold by fast food restaurants, franchised and nonfranchised. The same standard sandwiches were purchased by consumers on 4 franchised restaurants and 4 non-franchised, on three different days of the week, including the weekend. Temperatures were measured at the time of purchase, and in the laboratory, the samples were immersed in BHI broth and subsequently inoculated in Agar MacConkey, Agar Salmonella Shigella and Agar BairdParker for colony counting and identification of bacteria with Enterokit B and Staphy tests Test the Probac Brazil.The franchised outlets had more sandwiches contaminated by fecal coliforms and S.aureus. When it comes to temperature at the time of purchase, in several days, both types of establishment did not comply the legislation, presenting values inferior than 60° C, but there wasn't statistically significant difference between franchised and non-franchised. Nonfranchised outlets are more contaminated, but the franchised stores also fail to put into practice what the legislation proposes for Best Practice Sanitary Hygienic.

Abstract Non-typhoidal salmonellosis is an important zoonotic disease caused by Salmonella enterica. The aim of this study was to investigate the prevalence of plasmid-mediated quinolone resistance in Salmonella spp. and its association with fluoroquinolone susceptibility in Brazil. A total of 129 NTS isolates (samples from human origin, food from animal origin, environmental, and animal) grouped as from animal (n = 62) and human (n = 67) food were evaluated between 2009 and 2013. These isolates were investigated through serotyping, antimicrobial susceptibility testing, and the presence of plasmid-mediated quinolone resistance (PMQR) genes (qnr, aac(6')-Ib) and associated integron genes (integrase, and conserved integron region). Resistance to quinolones and/or fluoroquinolones, from first to third generations, was observed. Fifteen isolates were positive for the presence of qnr genes (8 qnrS, 6 qnrB, and 1 qnrD) and twenty three of aac(6')-Ib. The conserved integron region was detected in 67 isolates as variable regions, from ±600 to >1000 pb. The spread of NTS involving PMQR carriers is of serious concern and should be carefully monitored.

RESUMO

Listeria meningoencephalitis is a rare condition, occurring mainly in immunocompromised patients. We present two cases of Listeria monocytogenes meningoencephalitis in immunocompetent children, with successful treatment with betalactam/aminoglycoside combination. Unpasteurized cheese was postulated as the source of infection.


La meningoencefalitis por Listeria spp. es una infección infrecuente, principalmente en pacientes con algún tipo de inmunosupresión. Presentamos dos casos clínicos de meningitis por Listeria monocytogenes en niñas inmunocompetentes con tratamiento exitoso con β lactámicos combinados con aminoglucósidos; se identificó la ingesta de queso no pasteurizado como probable fuente de infección.

Objectives: The aim of this study is to report the occurrence of the first outbreak of food poisoning caused by Salmonella Alachua in Brazil, as well as the antimicrobial susceptibility and the genetic relatedness of Salmonella Alachua strains isolated from clinical and food samples. Material and methods: To elucidate the outbreak, an epidemiological investigation was carried out, and two samples of common food were tested - mayonnaise salad and galinhada (a traditional Brazilian dish of chicken and rice) - according to the Compendium of methods for the microbiological examination of foods. Five stool samples were tested employing classic methods for the isolation and identification of enterobacteria. Strains of Salmonella were characterized for antibiotic susceptibility according to the Clinical and Laboratory Stan- dards Institute guidelines (2013), and submitted to pulsed-field gel electrophoresis analysis, performed according to the Centers for Disease Control and Prevention PulseNet protocol. Results: A total of 94 people were interviewed after ingesting the food, 66 of whom had become ill. A 60-year old female patient who was hospitalized in a serious condition, developed septic shock and died two days after consuming the food. The presence of Salmonella Alachua was confirmed in all the analyzed stool samples, and in the two types of food. The five strains showed higher than minimum inhibitory concentration values of nalidixic acid (≥256 µg/mL) and reduced ciprofloxacin susceptibility (minimum inhibitory concentration = 0.5 µg/mL). The pulsed-field gel electrophoresis analysis revealed indistinguishable patterns in Salmonella Alachua strains isolated from clinical and food samples. Conclusion: The data presented herein confirm the foodborne disease outbreak. Aiming to identify new sources of bioactive secondary metabolites, we isolated 82 endophytic fungi from stems and barks of the native Brazilian tree Caesalpinia echinata Lam. (Fabaceae). We tested their ethyl acetate extracts in several in vitro assays. The organic extracts from three isolates showed antibacterial activity against Staphylococcus aureus and Escherichia coli [minimal inhibitory concentration (MIC) 32-64 μg/mL]. One isolate inhibited the growth of Salmonella typhimurium (MIC 64 μg/mL) and two isolates inhibited the growth of Klebsiella oxytoca (MIC 64 μg/mL), Candida albicans and Candida tropicalis (MIC 64-128 μg/mL). Fourteen extracts at a concentration of 20 μg/mL showed antitumour activities against human breast cancer and human renal cancer cells, while two isolates showed anti-tumour activities against human melanoma cancer cells. Six extracts were able to reduce the proliferation of human peripheral blood mononuclear cells, indicating some degree of selective toxicity. Four isolates were able to inhibit Leishmania (Leishmania) amazonensis and one isolate inhibited Trypanosoma cruzi by at least 40% at 20 μg/mL. The trypanocidal extract obtained from Fusarium sp. [KF611679] culture was subjected to bioguided fractionation, which revealed beauvericin as the compound responsible for the observed toxicity of Fusarium sp. to T. cruzi. This depsipeptide showed a half maximal inhibitory concentration of 1.9 μg/mL (2.43 μM) in a T. cruzi cellular culture assay.

Objetivo: determinar los factores de interés epidemiológicos relacionados con la ocurrencia de brotes de enfermedades transmitidas por alimentos en La Habana en el período 2006-2010. Métodos: se realizó un estudio descriptivo retrospectivo de 130 brotes de enfermedades trasmitidas por alimentos, analizados en el Instituto de Nutrición e Higiene de los Alimentos en el período de enero del 2006 a diciembre del 2010. Los datos fueron obtenidos de los registros del laboratorio de Microbiología de los Alimentos de dicha institución y de las encuestas epidemiológicas del Programa Nacional de Vigilancia de estas enfermedades, del Ministerio de Salud Pública. Resultados: los lugares de ocurrencia de brotes más reportados fueron los comedores obreros (43,4 por ciento), ocasionados con mayor frecuencia por Clostridium perfringens, y los brotes familiares (32,8 por ciento) fueron producidos por Staphylococcus coagulasa positiva y Salmonella. Las carnes y productos cárnicos fueron los alimentos más implicados (52,0 por ciento), en la mayoría procedentes de comedores obreros y de escuelas. Los brotes familiares se relacionaron principalmente con el consumo de productos de repostería. El 89,2 por ciento y el 71,0 por ciento de los alimentos no fueron aceptables, según los indicadores de calidad sanitaria coliformes totales y coliformes fecales, respectivamente. El insuficiente tiempo, la temperatura durante la cocción y el calentamiento o recalentamiento del alimento, la inadecuada conservación en frío o caliente y la contaminación cruzada fueron los factores contribuyentes que más incidieron en la ocurrencia de brotes. Conclusiones: la calidad microbiológica inaceptable de los alimentos estudiados denota el incumplimiento de las buenas prácticas en la elaboración y conservación de los alimentos, lo que propicia la contaminación y la multiplicación de bacterias patógena


Objective: determine the epidemiological factors of interest related to the occurrence of outbreaks of food-borne diseases in Havana from 2006 to 2010. Methods: a retrospective descriptive study was conducted of 130 outbreaks of food-borne diseases analyzed at the Institute of Nutrition and Food Hygiene from January 2006 to December 2010. The data were obtained from records kept at the Food Microbiology laboratory of the institution and from epidemiological surveys contained in the National Surveillance Program of the Ministry of Public Health. Results: the places where most outbreaks were reported were staff cafeterias at workplaces (43.4 percent ), mostly caused by Clostridiumperfringens, and households (32.8 percent), caused by coagulase positive Staphylococcus and Salmonella. The foods most commonly reported were meat and meat products (52.0 percent), mostly from cafeterias at workplaces and schools. Household outbreaks were mainly related to the intake of sweets. 89.2 percent and 71.0 percent of the foods were not acceptable according to health indicators for total and fecal coliforms, respectively. Insufficient cooking time, cooking temperature, heating or reheating, inadequate cold or hot preservation and cross-contamination were the main contributing factors leading to the occurrence of outbreaks. Conclusions: the unacceptable microbiological quality of the foods studied reveals non-compliance with best practices in food preparation and preservation, paving the way for contamination and multiplication of pathogenic bacteria

Salmonella has been identified as the main aetiological agent responsible for foodborne diseases in several countries worldwide, including Brazil. In the State of Rio Grande do Sul (RS), southern Brazil, previews studies analysed official foodborne illnesses data, identifying Salmonella as the main bacterial agent of foodborne diseases during the period of 1997 to 2001. The present study aimed to analyse the official epidemiological data on salmonelloses occurred in the State of RS, during the period of 2002 to 2004. Even though data on recent salmonelloses were available, only data concerning the period comprising in 2002 to 2004 were analysed because the official worksheet records presented more consistent information about the salmonellosis outbreaks. Results indicated that, among the 624 foodborne outbreaks officially investigated, 202 (32.37%) were confirmed as salmonellosis. Among them 23,725 people were involved, 4,148 became sick, 1,878 were hospitalized and one person died. The season with the highest incidence of salmonelloses was spring, and the most affected age group was composed of people aged between 20 to 49 years old (56.66%). Animal origin foods -especially eggs and meat products -were very often involved with the outbreaks, however homemade mayonnaise was identified as the main food vehicle for salmonelloses (53.51%). The majority of the cases occurred inside private homes (55.81%) and food services (12.1%), and the main factors contributing to the occurrence of the outbreaks were the consumption of products without sanitary inspection (26.7%) and exposure of food at room temperature for more than two hours (18.58%). Similarly to what was previously reported for the period of 1997 to 2001, Salmonella spp. was the most prevalent foodborne disease agent in the State of RS during the years of 2002 to 2004.

The genus Vibrio is a member of the family Vibrionaceae, and among their disease-causing species, Vibrio vulnificus, a lactose-positive gram-negative bacillus, is one of the most virulent pathogen of the noncholerae vibrios. We describe the case of a 39-year-old male patient, who was using immunosuppressive therapy, admitted to the hospital for liver transplantation. Twelve hours later, the patient presented high fever, myalgia, anuria and erythematous plaques on lower limbs, of rapid growth and proximal progression. The patient was treated with ceftriaxone, meropenem and oxacillin, however he expired within 30 hours. Blood cultures showed growth of a gram-negative bacillus, which was later identified as Vibrio vulnificus.


O gênero Vibrio é membro da família Vibrionaceae, e entre as espécies patogênicas, Vibrio vulnificus, bacilo gram negativo lactose positivo, tem sido frequentemente citado. Descrevemos o caso de um paciente masculino de 39 anos, em uso de medicação imunossupressora, admitido no hospital para transplante hepático. Doze horas após a internação, o paciente evoluiu com febre, mialgias, anúria e placas eritematosas em membros inferiores, com rápido crescimento e evolução proximal. O paciente foi tratado com ceftriaxona, meropenem e oxacilina sem melhora, evoluindo para óbito em 30 horas. Hemocultura mostrou crescimento de bacilo gram negativo posteriormente identificado como Vibrio vulnificus.

En las últimas tres décadas, se han identificado gran número de enfermedades emergentes que afectan al ser humano, la mayoría de las cuales son de origen infeccioso e incluyen enfermedades bacterianas, virales, parasitarias, entre otras. Muchas de éstas son de origen zoonótico, tal es el caso de algunas especies de Arcobacter, actualmente consideradas bacterias emergentes y, también, asociadas a transmisión alimentaria y de creciente importancia en salud pública. El incremento en los datos de prevalencia e incidencia de casos asociados a esta sugiere que la infección en humanos y animales ha sido subestimada, debido a la carencia de conocimientos al respecto y de un protocolo estándar, universalmente aceptado, para el aislamiento primario de este organismo y al uso de correctos métodos y técnicas de identificación. El incremento en el hallazgo de Arcobacter en alimentos derivados de animales y en muestras tomadas durante el proceso de producción de alimentos, hace que aumente la preocupación en materia de salud pública, ya que aún se conoce muy poco del potencial patogénico de las especies Arcobacter y los pocos estudios que se han llevado a cabo, muestran una gran cantidad de especies hospederas y rutas de transmisión. Dado lo anterior, el objetivo de la presente revisión es el actualizar al lector en las características más destacadas de esta bacteria en cuanto a su morfología, distribución, clasificación, transmisión, asociación con aguas, alimentos, mascotas y animales de crianza, como también sobre su aislamiento en laboratorio, factores de virulencia y patrones de sensibilidad a antibióticos.


In the last three decades, several emergent diseases affecting human beings have been identified, most of them from infectious origin including bacterial, viral, parasitic and even difficult to classify as spongiform encephalopathy. Most of these are zoonotic as it is the case of Arcobacter, currently considered as an emerging and food borne pathogen, of growing importance for public health. The increase in the prevalence and incidence of cases associated to this bacteria as well as in the number of actual researches and reports, suggest that the infection in human beings and animals has been underestimated due to a lack in knowledge about this bacteria and of a standardized isolation protocols, as well as the use of correct identification methods and techniques. Increasing trends in the isolation of Arcobacter from animal derivates used as food and from samples taken during production processes, cause an augment in public health awareness, since there is little knowledge about the pathogenic potential of Arcobacter species and the few focused in this bacterial group, show many different transmission routes and host species. Given this, the objective of the present review is to actualize the reader in the most important characteristics of this bacterium, including its morphology, distribution, classification, transmission, association with water, food, pets and animals, as well as the laboratory isolation techniques, virulence factors and their antibiotic susceptibility patterns.

Salmonella remains a public health concern around the world, including Yemen although data on its incidence are few. This study determined the incidence of Salmonella infection in 250 enteric fever and 210 food poisoning cases attending Thamar general hospital and Dar Alshafaa medical clinic in 2008. In total, 773 clinical specimens were taken: 250 blood, 187 urine and 336 stool samples. Of the patients with enteric fever and food poisoning, 16.4% and 15.2% respectively were infected with Salmonella. The serovars isolated were: Salmonella Typhi [45.6%], Salmonella Enteritidis [24.4%], Salmonella Paratyphi B [14.4%], Salmonella Typhimurium [13.3%] and Salmonella Paratyphi A [2.2%]. The distribution of somatic groups was: D [70%], B [27.7%] and A [2.2%]. None of the isolates was resistant to ciprofloxacin, sparfloxacin, ceftriaxone or moxifloxacin, while 71.1% were resistant to cotrimoxazole, 62.2% to gentamicin, 56.6% to ampicillin and 35.5% to nalidixic acid

Introducción. Listeria monocytogenes es un patógeno facultativo intracelular, oportunista, causante de graves infecciones en humanos, como meningitis, encefalitis y bacteriemias; también, es causa de abortos. Los alimentos actúan como medio de transporte para infectar al huésped. La serotipificación ha discriminado trece serotipos: 1/2a,1/2b, 1/2c, 3a, 3b, 3c, 4a, 4ab, 4b, 4c, 4d, 4e, 7. El 4b es causante de la mayoría de listeriosis en el mundo. Objetivo. Determinar la frecuencia en Colombia de los serotipos de L. monocytogenes aislados de alimentos, durante los años 2000-2009. Materiales y métodos. Se trata de un estudio descriptivo y retrospectivo. Se analizaron 1.599 aislamientos, los cuales fueron confirmados como L. monocytogenes y otras especies de Listeria, con pruebas bioquímicas recomendadas por la Food and Drug Administration (Estados unidos) y utilización del sistema bioquímico api Listeria Biomérieux,serotipificadas con la metodología de Seeliger y Höhne. Resultados. De los 1.599 aislamientos, 1.424 fueron confirmados como L. monocytogenes. Los serotipos encontrados fueron: 1/2a con 135 (9,5 %); 1/2b, 154 (10,8 %); 1/2c, 68 (4,8 %); 3a, 4 (0,3 %); 3b, 29 (2,0 %); 3c,2 (0,1 %); 4a, 44 (3,1 %); 4b, 820 (57,6 %); 4c, 6 (0,4 %); 4d- 4e, 140 (9,8 %); 4e, 17 (1,2 %); 7, 2 (0,1 %); y tres no serotipificables, (0,2 %). Los aislamientos procedían principalmente de Bogotá, 1.035 (73 %); de Antioquia, 199 (14 %); de Nariño, 109 (8 %); del Valle del Cauca, 50 (3,5 %), y de otros departamentos, 33 (2,3 %). Conclusión. En los aislamientos analizados, 1.424 (89 %) correspondieron a L. monocytogenes, presentando una buena calidad en el aislamiento e identificación; la mayoría de estos aislamientos pertenecían al serotipo 4b, 820 (57,6 %), serotipo muy virulento. Se recomienda la vigilancia obligatoria de este microorganismo.

It can also cause abortions in human beings. Foods are the vehicle for infection of the host. Serotypification has discriminated 13 serotypes: 1/2a,1/2b, 1/2c, 3a, 3b, 3c, 4a, 4ab, 4b, 4c, 4d, 4e, 7. 4b is the cause of the majority of cases of listeriosis in the world. Objective. The frequency of serotypes of L. monocytogenes was determined in bacteria isolated from foods in Colombia. Materials and methods. The study is descriptive and retrospective. Over a 10-year period, 2000-2009, 1,599 isolates were examined. All were confirmed as Listeria monocytogenes and other strains of Listeria, using biochemical tests recommended by the Food and Drug Administration (USA) and API Listeria and serotyped using the Seeliger and Höhne method. Results. Of the 1,599 isolates, 1,424 were confirmed as L. monocytogenes. Serotypes identified were: 1/2a, 135 (9.5%); 1/2b, 154 (10.8%); 1/2c, 68 (4.8%); 3a, 4 (0.3%); 3b, 29 (2.0%); 3c, 2 (0.1%); 4a, 44 (3.1%); 4b, 820 (57.6%); 4c, 6 (0.4%); 4d- 4e, 140 (9.8%); 4e, 17 (1.2%); 7, 2 (0.1%); not susceptible of serotypification, three cases, (0.2%). Isolates came mainly from the Capital District of Bogotá, 1,035 (73%); from Antioquia 199 (14%), from Nariño, 109 (8%); from Valle del Cauca 50 (3,5%) and from other provinces 33 (2.3%). Conclusion. Of the analyzed isolates, 1,424 (89%) belonged to L. monocytogenes, showing a good quality in isolation and identification. Most of these isolates belonged to serotype 4b, 820 (57.6%), a highly virulent serotype. Obligatory surveillance of this microorganism is recommended.

Introducción. Las enfermedades transmitidas por alimentos son un serio problema de salud pública y, el pollo, uno de los alimentos asociados con ellas. Objetivo. Determinar la distribución y frecuencia de brotes alimentarios asociados al consumo de pollo contaminado por Salmonella spp., Listeria monocytogenes y Staphylococus aureus, mediante una revisión sistemática de la literatura científica. Materiales y métodos. Se buscaron los estudios de brotes asociados a Salmonella spp., S. aureus y L. monocytogenes, en las bases de datos Medline, Pubmed, Science Direct,SciELO,Librería Cochrane (CCRT),Biblioteca Virtual en Salud (BVS), Highwire,HINARI y MedicLatina. Se obtuvieron los datos para el cálculo de odds ratios (OR) mediante la elaboración de tablas de contingencia en el programa RevMan5™. Resultados. Siete artículos cumplieron con los criterios de inclusión y no se encontraron reportes de L. monocytogenes. El OR global fue de 3,01 (IC95% 2,37-3,81), lo que se interpreta como una asociación significativa entre el consumo de pollo contaminado y la infección alimentaria. Se presentó heterogeneidad en los estudios incluidos (p=0,03), por lo que fue necesario un análisis por subgrupos de microorganismos; para el caso de Salmonella spp., el OR fue de 2,67 (IC95% 2,09-3,41). No se hizo análisis para S. aureus por reportarse un solo artículo. Conclusiones. Se encontró un OR de 2,61, lo que indica que hay una fuerte asociación entre el consumo de pollo y la adquisición de salmonelosis. El principal factor de riesgo para adquirir salmonelosis es el consumo de pollo de asadero en los restaurantes.


Introduction. Food borne diseases are a serious public health problem. Poultry are often associated with these outbreaks. Objective. A systematic review of the literature is provided concerning the distribution and frequency of food borne outbreaks associated with consumption of chicken contaminated with Salmonella spp., Listeria monocytogenes and Staphylococcus aureus. Materials and methods. The search for studies of outbreaks associated with Salmonella, S. aureus and L. monocytogenes was conducted in Medline, Pubmed, Science Direct, Scielo, Cochrane Library (CCRT), Virtual Health Library (VHL), Highwire, HINARI and MedicLatina. Data were obtained for the calculation of odds ratio (OR) by preparing contingency tables using the RevMan5 program. Results. Seven articles met the inclusion criteria; however, no reports of L. monocytogenes were obtained. The overall OR was 3.01 (95% CI: 2.37, 3.81); this was interpreted as a significant association between the consumption of contaminated chicken and food poisoning. In the included studies heterogeneity (p= 0.03) was presented, so it took a subgroup analysis of microorganisms, in the case of Salmonella OR was 2.67 (95% CI: 2.09 -3.41). No analysis was made for S. aureus reported a single article. Conclusions. The OR indicated a strong association between chicken consumption and acquisition of salmonellosis. The main risk factor for acquiring salmonellosis is the consumption of chicken from grill restaurants.
